I have successfully bonded my new HTC One S with Ford Audio over bluetooth, however on playing music on my phone I have no idea how to stream it in the car, it does not seem to be happening automatically? Any guide would be great thanks

Hit AUX and go to the little wi-fi sign (even though it's bluetooth), should come through.

If your stereo supports it do this. If not you have to use voice commands and say "external device" > "Bluetooth" > "play"
But you won't have control of the tracks through the steering wheel.
