Hi
My steering seems a bit 'jittery' especially at high speed - any ideas?

Have you checked your power steering fluid?

One of the common problems are the lower arm bushes. These wear out and can affect your steering.

As VVG says Escorts suffer with bushes wearing and believe me from experience it can cause some real brown trouser situations. I've driven an escort so bad it would dramatically understeer on a shallow bend but when you try and give it some extra turn it replies with equally dramatic oversteer. Very scary.
