Just got the form from dvla to assign the new reg over , what happens when I sell the car obviously I transfer this reg onto any new car but what about the old reg ? I've seen how much it costs to retain it and its quite expensive so does it get re registered with a new registration and more importantly do I have to pay?

No you have to put it back on retention. It's quite a painful slow and relatively expensive process imo.

When you take your private plate off you are given one to put back on which 99% of the time is the original one.

This!

Don't worry about the old reg, you don't need to do anything else until you want to transfer your private plate off, at which point the DVLA will assign a n other reg back to the car... And as iNath said, 99% of the time, this will be the same reg that was on it originally.
