Coolant Temperature Sensor Change?

Hi I think my coolant temperature sensor might be what is causing my cold start problem.

Essentially when you first start your car you can drive away happily.... Mine won't it will start fine, revs will fluctuate between 1000-1250rpm for a minute or so before settling at about 800rpm. If I try to drive away as soon as I start the car it will rev to a point then jerk about. Try and reverse up a hill as soon as you start it and it will stall.

If I sit around for 20 seconds and then go it will drive fine.

I know with my old car a common boost issue was caused by the coolant temperature sensor.

Wondering if this could be the cause and if so how to go about changing it.
