Hi, I'm new to this, I'm at my wits end with my Ford focus 1.6 13 plate!!

I took it in for a service knowing the aircon needed re gassing, after a full service we have had problems with the temperature, the gauge is shooting up after long drives. After taking it back in several times and each time thinking it's been fixed it happens again, the confusing thing is the engine is NOT actually overheating, but something is telling the dash that it is, therefore the fans come on and car goes in to safety mode. Can anyone please help?

Check for damaged wires or disconnected plugs under the bonnet.
Highly likely someone has snagged or unclipped something while working on the aircon.
I'd hazard a guess that it's a temperature sensor [emoji57]

Do you know exactly what work was done to the car? 

Is it a petrol or diesel?
