Stays on although it can be reset under certain conditions (see handbook) . I think one of the most useful driving features on this car.

What triggers the engine starting again in the manual?

Genuine question , I’ve never driven one..

The clutch switch.  The second you press the clutch, the engine restarts.

When I first got the st line I thought I’d have to turn it off in traffic jams etc.

Actually works very well. No complaints

My only issue with using auto hold on all the time is if your sat at a junction or traffic lights and get shunted wouldnt it cause more possible damage to your car rather than having foot on brake if you had chance to see it coming in the rear view mirror ?

Or moving the steering wheel slightly

I think I'd be more worried about the brake pedal snapping my ankle than the state of the bumper in that situation!

Well that's an interesting one, can't say I've ever needed to steer without the engine being on!  It also restarts if you're on a hill and roll forward which can be annoying if the traffic only moves a few feet!

I have 2019 1.5 ecoboost stline x (manual) with auto-hold and electric parking brake (amongst other electronic gadgets). The brakes are of particular concern as they do not function consistently. Auto-hold can turn itself off without me knowing - a message should be displayed as it is when you try and disable it under certain circumstances. This is dangerous as car will roll away! Similarly, parking brake should automatically come on when ignition is switched off. Mine randomly doesn't - again dangerous as car will roll away! Dealer says, " operating normally!" I'd say there's a faulty module that controls the brakes. Any comments?

I’ve got an automatic but there is a big thread on here of people with that same issue.

Threads called ‘Auto Hold problems”.

Thanks - will check it out!
