ST170 Oil temp and Water temp overheat

Hi,

     I am just looking for some opinions of what might be going wrong with my Focus ST170 project car. I have owned the car for a while now but only just got round to actually restoring it. The car has passed its MOT which is a good thing! 

However, recently I was just doing a little polish and left it turning over as it hadn't been started for a while. After about 15-20mins after the car had warmed up I heard the fan going crazy. I do have an aftermarket exhaust on it so that will tell you how loud it was. I looked into the cabin at the gauges and noticed the oil temp and water temp gauges were both up in the red and the oil pressure gauge was at 0. I obviously thought this was due to a lack of oil. I obviously checked this and it was within the level on the dipstick. I topped it up a little just to be sure and tried again after the car had been cooled for a few hours. Once again the same problem occurred. I have been told this could be the thermostat but I am still getting hot air coming into the cabin so I assume it isn't that. If you couldn't tell I am not totally mechanically, but I can do the odd jobs myself, but I am at a total loss with this hence why I am seeking help haha. 

Any help or idea's are appreciated. The car has been remapped by the previous owner which I am unsure if this could be causing the issue.
