I've just purchased a 2021 MK8 ST-Line and I've been trying to see where, and how, I can get the gear I'm in to be shown on the dash - It advises me to go up a gear of come down a gear but doesn't show me what gear I'm currently in.



Automatics these days have up to 9 (or even more) gears so an indicator of current gear is usual, and useful in manual mode where you don't have a gearlever position to guide you.

Not so with manuals where the manufacturer assumes that if you are capable of using a manual box, you can figure out what gear you are in.

I have seen "add on" indicators mainly intended for motorsport, eg:

(As an aside, lurking in the dark corners of my memory, I have an idea that I have come across a manual (not Ford) with an indicator of current gear (as opposed to an up/down shift indicator). Anyone else seen one, or am I dreaming again?😀).
