could anyone advise me of a decent not overly expensive valve to replace the stock one, to get a flutter sound instead of the standard turbo waste noise?

    You're better off with an induction kit, you'll notice it more. You can't really fit a bov, ecoboosts are fitted with a recirculation valve instead. More hassle than it's worth to change that.

    The flutter sound you're after is with no blow off valve (or one that doesn't remove enough air from the intake) so you get whats known as compressor surge (where the excess air has nowhere to go, so spins the turbo backwards). There are many debates about whether this is bad for the turbo or not, so read into it as you feel.

     I didn't think the 2017 mk7.5 ST-3 was an ecoboost engine? Or am I mistake?

    st fiesta is ecoboost engine, its a general term for the direct injection turbo engines like the 1.0, 1.6 (yours ) 2.0 and 2.3.
