I'm wondering if the collective knowledge could tell me how we can upgrade our maps on our S-Max? Things like the new Forth Road Bridge still aren't on it, and having worked with GPS's before I wondered if it is possible to upload a version of the open source maps to the car somehow; or connect to Google Maps on the car console?

Depends what Sync model your car has

1 and 2 use an SD card loaded with maps that can be replaced for latest version. If you have Sync3 ( I would imagine your 66 plate is an MY17 car so  Sync3) go to 

https://www.ford.co.uk/owner/resources-and-support/sync-bluetooth/update#/status/

And enter your VIN and it will offer any downloads available for your vehicle
