Losing coolant because of pressure

I only bought this smax, a 2008 2.0 tdci last week.

Noticed it was losing coolant very rapidly. As in litres of coolant after a drive.

Eventually narrowed it down and found it was leaking out the expansion tanks overfill hole.

So my question is why would it do this?

No milky substance on oil cap or smoke from exhaust.

Other symptoms are:

Temperature gauge goes from 1/2 mark to 1/4 then back to 1/2 throughout driving it.

Heating is sometimes cold when on.

Changed tank and tried 3 different caps and still happens.

No signs of overheating.
