Mk3 condensation issue

I have a 2014 Mk3 and really struggle with condensation inside the car! It gets really bad in wet or cold weather, like dripping down the windscreen.

I've checked and fixed the boot leak issue so there's no standing water. Changed mats, fully cleaned interior, changed pollen filters, dried it out on sunny days.... No luck

Is this a common problem, any advice is appreciated as it's REALLY annoying!
