When does the fan kick in a mk7 1.25?

Hello guys,

Im gonna start by saying im a bit hypochondriac about my car.

2 weeks ago i was stuck in traffic and to pass time i decided to connect the obd2 to check on my coolant temperature. It went to 105ºC before i panicked and turned on ac to turn on the fan and full heat blast. It rapidly went down to 93ºC. It didn't turn the coolant light on the dashboard.

Today i checked my coolant and it went down (from middle to little up of the min mark). In the last 8k km it went from the max to the middle.

I have 2 guess's which are:

I have blown the headgasket with the 105ºC ( in my mind i think i've lost some power, but as i said im a bit hypochondriac);

Or

I have a micro-leak that with the pressure of the 105ºC leaked a little bit of coolant.

 

Which one is the most probable?

And at what temperature does the fan kick full blast?

Then there's a very slim chance i've cooked the head gasket right? That's a relieve to hear!
