Ecoboost 240 Engine Rebuild

My Ecoboost 240 blew its head gasket and I want to take the engine and head to a good engine rebuilder to be completely overhauled.

Now, I understand that the block may have issues, so I have sourced a good replacement should I need it.

My questions are:

1) Does anybody know a good\trusted engine rebuilder in or around Hertfordshire\North London?
2) From my "limited" research, it seems that if I get the head\block skimmed, then I need to enlarge the pockets on the pistons a similar amount to avoid piston slap and maintain compression - is that correct?
3) What else would you ask the rebuilder to do while they have the engine\head

Any thoughts or advice greatly appreciated

Usually you'd just buy a thicker headgasket to take up the extra space between the head and block after skimming.  Unless there's something specific about this particular engine that I'm not aware of.

Many thanks for your reply, very interesting as did not realise you could do this as I've have not seen an ad advertising different thicknesses.
