C max 1.6 tdci temperature fluctuations

Hello everyone,

Maybe someone could help me with mystery I'm having with my ford cmax 1.6 tdci 2014.

I bought it with faulty head gasket, it was replaced together with water pump, thermostat housing with thermostat and temp sensor, timing belt. 

And now I keep having this issue with temp fluctuation. I go on motorway,engine heats up to normal temp and when I go to town, stop at the red light and later driving away temp starts dropping all the way to the bottom, I release accelerator ant temp goes back up to normal, change gear accelerate and temp goes down, release it and it goes back up.

Work was done at a good garage, they cannot see any issue, because every time I go there it's not happening. And they did bleed the system. Water levels not changing, heating working fine.

This morning when I was driving temp didn't even go up and radiator fan kicked in, even acceleration went crazy, was going up when I press the clutch, I restarted the engine and then it was fine, fan stopped running and acceleration was fine.

Did anyone have similar issue or does anyone know what is happening with this car?
