How rare is the leather interior on a pre face lift mk7 fiesta?

Mines got two tone grey and blue and the covered dash.

I cant find any other fiestas currently for sale on facebook, auto trader, motors or round my local second hand dealerships that have the leather seats and such.

Are they worth much to anyone who wants them, or is the cloth just preferred?

Very rare option.  Known as 'Individual'.

There was the blue option like yours in the Zetec S (which I have found on Gumtree in 20 seconds lol) -

It's a bit Marmite tbh.  Some people would actively avoid it.  Though if you can find a buyer who does want it, they'll be likely to pay more as it'll be hard to find another.

That sounds a bit much for private sale to me.  Would be thinking nearer £3k than 4 now.  But there's no harm in starting with a higher price, can always drop it if there's no interest.
