Engine Temp drops when AC on?

I thought I had a doggy Thermostat as Engine temp would bounce between 60-75 on the dash regardless of ambient temp with the exception of NSL speeds, but I have figured out over the last week or so this is only when the Blower & AC is on, with it off, it will sit at 90 without issue.

Is this still a Stat or something else?

    I've never experienced that happen on anything else. 

    Do they just run the fan full time with the AC on or something?

    Generally yes. 

    The time to worry is if it over heats
