Cut in fan issue

52 plate ford fusion 1.4 petrol and the cut in fan won't work until I unplugged the newly fitted sender switch no head issues, just had the water pump replaced and cam belt sorted but keeps bubbling up and the cut in fan fails to work till you unplug the sender, both pipes hot stats seems to be working fine been down to the garage but can't find the fault any help

The fan will always run if you unplug the sender switch. It is designed as a fail safe system.

Is the engine overheating ?

What are you referring to as "keeps bubbling up"  ?

Yes the expansion tank over flows but only with the sensor plugged in 

Your head gasket has most likely failed.

You can buy a Hydrocarbon test kit to check for exhaust gases in the coolant.
