Misc:
-It's a good idea to buy polymer coated rotors to prevent rust & also high quality ceramic brake pads so that they do not squeal
-Brake pads should ALWAYS be replaced with new rotors
-Brake rotors should ideally be replaced or resurfaced when replacing pads (Unless they have minimal lip & negligible scoring)

-Crack off the wheel nuts for both of the front wheels (19mm)
-Support the front end of the car with axle stands
-Remove both of the front wheels (19mm) 

-Spray penetrating oil on the calliper carrier & bracket bolts & clean them with a wire brush

-Remove both 12mm calliper carrier bolts with a SOCKET (If the slide pins start to spin then hold them with a 17mm spanner)
-Leaver the calliper piston in with a flathead screwdriver
-Pull the calliper carrier away and cable tie it out of the way on the shock absorber

-Pull each slide pin in & out and see how easily they slide (Also check the boots for any tears)
-This is a good opportunity to replace/clean/re-grease the slide pins (Refer to that guide if you wish to do that)
-Depress the calliper piston with a 22" piece of flat steel & wide jawed pipe grips (Check the calliper piston seal for any tears)

-Remove the brake pads & brake pad shims
-Remove both 15mm calliper mounting bracket bolts with a SOCKET (Crack them both off before fully removing either of them)
-Remove the calliper mounting bracket

-Remove the old brake rotor (Tap it with a hammer if it is seized)
-Clean up the wheel hub mounting face with a wire brush & brake cleaner
-Apply a conservative amount of high temperature copper anti seize to the wheel hub face (Don't get any on the studs)
-Mount the new brake rotor

-Clean up the mounting bracket with a wire brush. Pay special attention to the points where the metal shims sit.
-Apply brake grease to the shim mounting points on the calliper carrier & reinstall new shims (Make sure the shims sit flush against the calliper bracket)

-Refit the calliper mounting bracket & torque the 2 bolts @ 75Nm
-Install new brake pads

-Put brake grease on the 3 mating points of the calliper carrier (Piston & the 2 arms)
-Slide the calliper carrier over the pads & tighten the 2 bolts @ 28Nm

-Repeat this on the other side of the car

-Give the rotors a clean with brake cleaner (UNLESS THEY ARE POLYMER COATED THEN SKIP THIS STEP)
-Apply a conservative amount of aluminium anti seize to the hat of the rotors (Don't get any on the studs)
-Put the wheels back on (19mm)
-Put the car back on the ground
-Torque the wheel nuts to 110Nm (19mm)
-Press the brake pedal a few times to push the calliper pistons back out

Hi, I'm attempting this soon. In the video she undoes the bleed nipple, Haynes manual also says to do this, is it necessary?

It's not necessary.  But does reduce the risk of flipping the master cylinder seals.

I never do it either. I thought it was done to prevent old fluid going back into the system, but your reason could also be true as well.
