When I put my foot down mainly in 3rd and above the turbo seems very jumpy any ideas what this could be?

Turbos react best to smooth rev delivery. 'Putting your foot down' simply overfeeds it with fuel and it won't react well. Is this a new fault, or has your car always reacted like that with your right foot behaviour?

Maybe for a retro Jap car with an oversized turbo...    Euro cars have tiny turbos and tightly controlled fuel injection.  You should be able to mash your foot into the floor without any issues.

I suspect the problem here is a slipping clutch rather than being engine related. 🤔
