Standard 125ps 1.0 and remapped (tuned) 125ps 1.0 AFR

What is the difference between a standard 125ps 1.0 and a remapped 125ps 1.0 AFR (Air Fuel Ratio)?

Which ratio should be considered as alright not too lean not, too rich?
