The coolant in the car is very nice and blue, but from what I can see in the online manual, it's supposed to be red. Is this much of an issue as I was going to top it up and would have just got some blue coolant.

Does this all need to be drained and refilled with red?

Do you know whether it's had a recent waterpump or thermostat change?

The original coolant was only designed to last 10 years so will probably have been replaced by now anyway.  The blue is fine from a frost protection point of view, but is only designed to last a couple of years.  Most pink is 5 years.  Genuine Ford pink is 10 years.

Some claim to mix with all other types, such as Prestone.

I've got no service history with it so I'm going to assume everything will need doing at the next service.

Can I just add more blue do you think?

Yes you can just add some blue.  Or even water if it's only a small top up.
