How would I know they haven't just fitted a reconditioned engine?

    The plastic cam cover would be the biggest giveaway.  Metal parts can be reconditioned to look brand new, but old plastic never looks new again.  Of course, they may replace the cam cover during reconditioning...  Ultimately, you'd probably just have to trust them unless you literally stand there watching them open the crate.
