Overheating sensor alarm comes on

Overheating sensor alarm comes on when engine is normal running temperature. I have replaced the thermostat and the engine temperature sender. I have also replaced the cooling fan module  but all to no avail! After the alarm comes on you can literally wait a minute and drive a further mile before it all happens again. Car does not boil up, but in diagnostic readings it says it is 111 degrees but by probe it is normal temperature. 

Has anyone got any ideas?

1.6variable valve petrol engine.

Does the temperature reading via OBD change at all or does it seem stuck on 111?

It is always on 111. 

When the fan is on and it is saying engine temperature too high.

I don't know what Diagnostic Tool you are using, but there may be separate Sensors for Water, Cylinder Head and Oil Temperatures. You need to monitor all of them to see if one of them is giving a spurious reading.

They should normally be within about 5 Degrees of each other in normal driving.
