It's suddenly got hot here 30-32c and when I'm stuck in stationary traffic or slowly moving traffic, the rad fan is on all the time when the air conditioning is turned on. The engine temp gauge shows that the coolant temp is low but still the fan works so I'm guessing that the AC also uses the fuel systems air temp/mass reading to determine whether or not the fan should run. I'm worried that it will burnout or something because it is running for so long or is it normal to run all the time in these conditions? When I switch the AC off the fan stops almost immediately.

I have only used the AC in cooler temps before and it ran the fan intermittently at that time but I'm wondering whether the AC engine coolant temp sensor needs replacing (the big one on top of the stat housing, it's not cheap so I would prefer not to change it and 'see', 24 Pounds here).

OK, thanks for the info, just what I had hoped. It was 35c here today and when I got home it was 28c indoors and so felt cool. The Escort's AC was working well though.

As soon as AC is turned the AC fan turns on. Perfectly normal

Yes, but before at lower temp it turns on and off intermittently, but now in the first hot weather we've had it started to run constantly and I was worried about the fan. I thought that maybe it was running because my AC engine coolant temp sensor had gone faulty. But it would appear to be normal, so the AC must also run off air temp because the engine coolant temp goes quite low when I'm crawling in traffic and the fans running all the time. Without AC the fan does run quite regular but not all the time in the same conditions.
